STUFFED AUBERGINE BOATS

Ingredients:

4 aubergines

1 punet of mushrooms

1 onion

150 gr minced meat

1 dry bread (for bread crumbs)

1 tin of chopped tomato

50 gr of cheese (mild cheddar)

butter to fry

parsley, dried garlic, black pepper

Halve the aubergines and cover with lots of salt to get rid of aubergine’s burning taste.

Chop the mushrooms and onions into very small pieces. Turn the oven on 200C.

Wash well the aubergines so that the salt and the burning juices will go.
And dry them on a kitchen towel.

Now, show how to make boats out of the aubergines to your child and have fun together.

While chopping the vegetables, give the dried up toast to your toddler to smash the brick into a sand :)

Put a little bit of butter in a pan and fry the onions.

Chop the aubergines that are left from the boats.

Fry the minced meat

Add the chopped mushroom and aubergines

Add chopped parsley

Add some black pepper

And some dried garlic

Grate the cheese

Put the chopped tomatos on the oven dish and sprinkle some dried garlic over it

Put the aubergine boats on top of the tomato bed.

Put the meat and vegetables mixture on top of the boats or fill them with passengers :)

On top of the meat mixture put the bread crumbs that your little one made

Put the greated cheese on top

Put the dish with aubergine boat into the oven for 30 mins.

Enjoy!

And 4 of your 5 a day in one scrummy dish.

For vegetarian version, discard the meat and add more mushrooms. It is equally tasty with or without meat.
